“I needed to not squander anything,” he says of the decision to broil the bird on the bone at Barbuto. I became weary of burning through such a lot of cash on them for our party that I chose to prepare my own variant of Wingstop's lemon-pepper chicken wings.
Ingredients
- 2 1/2 tablespoons extra-virgin olive oil
- 1 1/2 tablespoon lemon-pepper seasoning
- 2 1/2 cups oil, or as needed
- 16 chicken wings
Instructions
- 1-Heat oil in a deep-fryer or large saucepan to 375 degrees F (190 degrees C).
2-Stir olive oil and lemon pepper together in a bowl.
3-Fry wings in hot oil until no longer pink at the bone and the juices run clear for about 8 minutes; an instant-read thermometer inserted near the bone should read 165 degrees F (74 degrees C).
4-Toss hot wings with the lemon-pepper mixture to coat.
